All planets say "Explored" (not sure about final level - have no way of checking), got every chest, and every secret. 100% on your load screen would be chests, secrets and % of planets explored. God I hate 100% exploration, every save since my first has been 98/97% exploration, all chests and secrets. I'm not hunting down every nook and cranny

Yes you can have multiple save files. In the main menu, the “continue” selection will pick up on the last used save file. The selection below that which says something like “load Journey” allows you to choose from up to 5 different saves. This is on PC but I imagine it is the same on all platforms.
