At 100 $ a day a workshop is doing fine and on the exact same pacing. Its an investment that you'll keep even if you get captured. Making 200-400 a day is actually way too much imo as you there are many cities now and you can place multiple workshops in a single location.
Quyaz and Ortysia are two high prosperity towns, good for workshops. Taking both would help immensely grow and fund a fledgling kingdom. Revyl has great positioning, it’s in Sturgia. Again, one way in. But it only has two villages and won’t be able to afford you as high of a garrison or army.

It could be Reyvadin, I think it is Reyvadin actually, the Northern most town. Generally dyeworks gives the largest return, but at the largest investment. I tend to think that if I get a 10% return from my Alright So IMO I dont think you have have a decent sized army until youve learn to sustain it. Workshops can be profitable. Just put the right one in a city with a good prosperity. For example if a city has two attached villages farming olives, an olive press might be smart, etc Fiefs are your best source of income. Iam different and weird.

There's no real best answer to this because it can depend on what kingdom your in or more importantly what kingdom you will go to war with. If you own a workshop in enemy territory it gets taken from you. If a fief has low prosperity it doesn't matter if it used to have good workshops because the low prosperity will likely ruin it.
